- Black Bean Topping (see instructions below)
- 1 cup sour cream
- 1/4 cup chopped fresh cilantro
- 2 tablespoons water
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 8 (7-inch) flour tortillas
- Olive oil cooking spray
- 1 cup shredded mild cheddar cheese
- Sliced avocado
- Cilantro leaves
- Preheat broiler.
- Prepare Black Bean Topping (below).
- Combine sour cream, chopped cilantro, water, salt and black pepper. Set aside.
- Coat both sides of tortillas with cooking spray. Arrange tortillas in a single layer on a large baking sheet. Broil 2 minutes on each side or until crisp and beginning to char around edges.
- Spread 1/8 of Black Bean Topping over each tortilla. Sprinkle 1/8 cup cheddar cheese over Black Bean Topping. Broil 1-2 minutes.
- Drizzle sour cream mixture over melted cheese. Garnish with avocado and cilantro, if desired.
Black Bean Topping
- 1 pound ground beef
- 1 cup refried beans
- 1/2 cup fresh salsa
- 2 tablespoons chopped fresh cilantro
- Coat a large nonstick skillet with cooking spray and heat over medium-high heat.
- Cook ground beef until done.
- Stir in refried beans, salsa, and cilantro and cook 1 minute or until thoroughly heated.
SERVING SIZE: 2 tostadas
