TURKEY MOZZARELLA MELT

PREPARATION TIME: 20 minutes SERVES: 4
  • 4 English muffins, split
  • 4 tablespoons mayonnaise
  • 1 tablespoon plus 1 teaspoon Dijon mustard
  • 8 ounces thinly sliced roast turkey
  • 16 large fresh basil leaves
  • 2 medium tomatoes, cut into 8 thick slices
  • ¼ teaspoon freshly ground black pepper
  • 3 ounces thinly sliced mozzarella cheese
  1. Preheat the broiler. Place the English muffin halves on a baking sheet and toast under broiler until golden.
  2. In a small bowl, combine the mayonnaise and mustard.
  3. Spread each muffin half evenly with mayonnaise-mustard mixture. Top each with 1 ounce turkey, 2 basil leaves, and tomato slice. Sprinkle with pepper, then top evenly with mozzarella cheese.
  4. Broil 4 inch from the heat for 4 minutes, or until cheese is just melted and bubbly. Serve hot.
