SERVES: 4
- 4 English muffins, split
- 4 tablespoons mayonnaise
- 1 tablespoon plus 1 teaspoon Dijon mustard
- 8 ounces thinly sliced roast turkey
- 16 large fresh basil leaves
- 2 medium tomatoes, cut into 8 thick slices
- ¼ teaspoon freshly ground black pepper
- 3 ounces thinly sliced mozzarella cheese
- Preheat the broiler. Place the English muffin halves on a baking sheet and toast under broiler until golden.
- In a small bowl, combine the mayonnaise and mustard.
- Spread each muffin half evenly with mayonnaise-mustard mixture. Top each with 1 ounce turkey, 2 basil leaves, and tomato slice. Sprinkle with pepper, then top evenly with mozzarella cheese.
- Broil 4 inch from the heat for 4 minutes, or until cheese is just melted and bubbly. Serve hot.
