PREPARATION TIME: 15 minutes
SERVES: 4
- 1 1/2 tablespoons olive oil
- 3 garlic cloves, minced
- 2 pounds peeled and deveined jumbo shrimp
- 1/2 cup parsley
- 1 1/2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon ground red pepper
- 8 ounces uncooked angel hair pasta
- Prepare pasta according to package instructions.
- Meanwhile, heat oil in a large nonstick skillet over medium-low heat; add garlic and cook 1 minute.
- Add shrimp and cook 5 minutes or until shrimp turn pink in color, stirring occasionally. Remove pan from heat.
- Stir in parsley and remaining ingredients. Serve over pasta.
