Smoky BBQ Shrimp Recipe
PREPARATION TIME: 25 minutes SERVES: 4
  • 32 peeled and deveined large shrimp
  • 1/3 cup spicy barbecue sauce
  • 2 slices applewood-smoked bacon, cooked and finely crumbled
  • 1 1/2 tablespoons orange marmalade
  • Cooking spray
  1. Preheat grill
  2. Thread shrimp onto 4 (12 inch) metal skewers.
  3. Combine barbecue sauce, bacon, and marmalade; brush evenly over shrimp, using all sauce. Arrange skewers on grill rack coated with cooking spray. Grill 3 to 4 minutes on each side or until desired doneness.

Grilled Avocado with Lime-Cilantro Cream

PREPARATION TIME: 10 minutes SERVES: 4
  • 2 avocados, peeled, pitted, and halved
  • olive oil-flavored cooking spray
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup sour cream
  • 1 tablespoon chopped fresh cilantro
  • 1 1/2 tablespoon fresh lime juice
  1. Preheat grill.
  2. Coat both sides of avocado with cooking spray sprinkle evenly with salt and pepper. Place avocado flat side down on grill rack coated with cooking spray. Grill 1-2 minutes each side until lightly charred.
  3. Combine sour cream, cilantro and lime juice. Slice each avocado half in half; drizzle with sour cream mixture.
