SERVES: 4
- 13 ounces well-trimmed beef top round, cut into large chunks
- ¼ cup chopped cilantro
- ¼ cup minced red onion plus ½ cup red onion wedges
- 2 tablespoons canned diced mild green chiles
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ¼ teaspoon freshly ground black pepper
- ⅛ teaspoon salt
- 1 ½ ounces shredded pepper jack cheese
- ¼ cup tomato juice
- 1 teaspoon grated lime zest
- 1 tablespoon fresh lime juice
- 1 teaspoon olive oil
- 4 cups shredded romaine lettuce
- Preheat broiler. Spray broiler rack with nonstick cooking spray.
- Using a food processor, finely chop beef. Transfer to a medium bowl and stir in 2 tablespoons of cilantro, minced onion, chilies, chili powder, cumin, black pepper, and salt. Mix lightly with 2 forks, just until ingredients are blended. Gently shape into 4 equal patties.
- Broil patties 4 inches from heat source for 4 minutes. Flip patties and broil for 3 minutes, or until medium-rare. Top evenly with cheese and broil just until it melts, 1 to 2 minutes.
- Meanwhile, make the dressing. In a small bowl, whisk together tomato juice, lime zest, lime juice, olive oil, and remaining 2 tablespoons cilantro.
- Arrange lettuce, tomatoes, and red onion wedges. Drizzle with dressing. Arrange burger on bun and serve.
